Sunday Treats by Mom

Since I remember that Sunday means Family. This Sunday I'm back in Portugal (THANK GOD) so my mom decided to make some delicious treats for her favorite daughter (Ahahah sorry sis). They are incredibly delicious and easy, I'm sharing the recipes so you guys can try to get close to my mom's perfection on kitchen.

LEMON BISCUITS


Ingredients

500g of sugar

6 eggs

3 yolks

Lemon zest (amount up to you)

600g of Flour


In a bowl, mix the sugar, the eggs and the yolks until even and creamy. Then, gradually, add the flour followed by the lemon zest. Mix everything really well. Set little amounts of the dough into a baking tray (already set with flour) and bake it until gold.

Easy, cute and delicious!




CHOCOLATE CAKE WITH TOPPING


Ingredients


2 cups of baking flour

2 cups of sugar

1 cup of vegetable oil

1 cup of cocoa powder (or chocolate powder if you prefer)

1 cup of warm water (not boiling water just a little bit warm)

1 tbsp of baking powder

4 eggs


In a bowl, mix the sugar and the eggs. Add the oil and mix again. In a separate bowl sift the flour, the cocoa and the baking powder and add it to the mix. Warm up the water and gradually pour it. Prepare the cake tin with butter and a little bit of flour, place the mix into the the tin and bake it for about 40/45min (oven pre-heated 180ºC).

Note: Make sure you mix everything very very well for a while so the cake will be smooth and fluffy.

Topping:

7 tbsp of sugar

6 tbsp of semi-skimmed milk

2 tbsp of cooking butter

4 tbsp of cocoa powder


Put everything in a pan and stir it until it boils but don't let it burn. Make ome holes on the cake and then pour the topping on the top of the cake while it's still warm.

PORTUGUESE CUSTARD TART


Ingredients

- Puff pastry

- 260g of sugar

- 70g of cornstarch

- 5 yolks

- 0.5 L of semi-skimmed milk

- 1 cinnamon stick

- 2 lemon peels


In a pot mix the sugar, cornstarch and the milk. Then add the lemon, the cinnamon stick and put it on the stove until it gets thicker. Then let it cool down a little bit and add the yolks (already whisked). Set the puff pastry on a pie pan and with a fork make some holes on the bottom so the pastry gets soft. Pour the mix into the pastry and take it to the pre-heated oven (180ºC) for about 25min.

Note: If the top is not gold you can always set the oven for the top grill just for a few minutes
